This typical sauce from Campania probably dates back to 1600, the Aragonese period. Legend has it that this recipe was invented by a cook from Genua, who was nicknamed “o Genuvese” because of his origin. The process of preparing this sauce involved cooking it for several hours during which the meat and onion sauce had to “pippiare” gently. The resulting sauce was then used to season the pasta. A typical combination is, still today, with the broken ziti, but we recommend you try it with the busiate of Tumminia. A combination to try!
