We met the Verrigni company in the last Taste exhibition in Florence. The company is lead by Gaetano Verrigni and his wife Francesca Petrei Castelli who have recently modified the company’s name to Antico Pastificio Rosetano, since it has been over 114 years from the beginning of this passion for pasta, making it today one of the few companies with such high-quality pasta products. One interesting aspect of this company is that it has over 30 years’ experience in the organic product sector. In fact, it has been since the 60’s that the company produces organic wheat and for this its pasta is highly renowned in Italy as well as abroad. The organic series includes pasta made with semolina, course and whole-wheat Kamut, whole-spelt and durum wheat Senatore Cappelli.
