We chose the tomato “cappuliato” because its rich flavors, yet light taste, immediately captured our attention. An ideal menu for a summer lunch perhaps in front of the sea.

The name “cappuliato” is a Sicilian word meaning to be continuously hit or beaten. The principal ingredient of this recipe are the sun-dried tomatoes. These are then finely chopped with sun-dried bell peppers and then mixed together with basil, capers, fennel seeds, oregano, black peppers, and chili peppers. Finely chopped, these ingredients are blended thoroughly together with extra-virgin olive oil and preserved in a pressurized glass jar.
