Black ink squid risotto with a mandarin essence

Recipe for 2 people:

  • 250g Acquerello rice
  • 750ml water
  • ½ tsp salt
  • Black ink squid condiment
  • Mandarin olive-oil

Fill a pot with 750ml of water and bring it to a boil.More...

Add ½ teaspoon of salt and 250g of rice and leave cook for 10 minutes or until the water evaporates. Remove from the heat and add the black ink sauce ensuring to blend thoroughly. Dish, and as a final touch, add a drizzle of mandarin oil.

More cooking suggestions for you

If you want to make a traditional risotto, you should add the following ingredients to the above recipe:

  • 1 diced shallot
  • 3 tablespoons of extra virgin olive oil
  • 2 tablespoons of water
  • Pinch of salt
  • ½ glass of white wine
  • Vegetable broth

In a saucepan, sweat the diced shallots with 2 tablespoons olive oil and 2 tablespoons of water. Once the water has evaporated, add 1 more tablespoon of oil and add the rice, slightly toasting it. Salt and add the wine. Once the wine has evaporated, add the broth repeatedly to cook the rice. One minute before finishing the cooking, add the black ink squid sauce and stir. Remove from the heat, and after dishing, complete with a drizzle of mandarin olive oil.
