Trofie pasta with pesto sauce

Ingredients (for 2 persons):

  • 200g trofie pasta
  • 4 tablespoons of Genovese pesto

Add the trofie into boiling and salted water. more...

Cook them until ‘al dente’ (the time on the package says 18 minutes, but it’s best to check its texture after 15 minutes). Drain, reserving a cup of the cooking water. Add the pasta to a pan with 4 tablespoons of pesto, ensuring low heat. Slowly add 3 tablespoons of cooking water making sure to blend delicately all ingredients.

Our suggestions to you

  • A typical Ligurian recipe of ‘trofie al pesto’ also adds boiled potatoes and green beans to the dish.
  • Alternatively, if you want to make the dish creamier, simply add 4 tablespoons of ricotta cheese, well-whisked, thinning it with milk or the cooking water.
  • If you want to create an explosive flavor in a ‘minestrone’ soup, simply add 1 teaspoon (per person) of pesto at the end of the cooking time, so to ensure the basil won’t overcook.

L' Aperitivo

The pate’ of Treviso Radicchio is a perfect condiment when added to any risotto dish. Simply add a spoon towards the end of the rice cooking time and make sure all ingredients are well blended. Alternatively, you can make a fabulous vegetarian pasta dish.

Chocolate Cantucci are perfect when dipped in a luscious ‘zabaione’ or simply served together with a glass of Vin Santo. Or perhaps try them in the morning with a cappuccino?

Freshly chopped toasted almonds can enrichen a simple pastry dough to create exceptional sweet/savory pastries. Alternatively, almonds are great when added to rice with shrimps, peas and fresh seasonal vegetables.
